1. Intended use
RIDA®QUICK Gluten quant. is an R5-based immunochromatographic test for the quantitative analysis of contaminations by prolamins from wheat (gliadins), rye (secalins), and barley (hordeins) on surfaces, in cleansing waters (CIP water) and in foods like baked goods, sauces, chocolate containing desserts, spices and rice flour.
- Safe quantitative results within 10 minutes.
- Only R-Biopharm AG is authorized to use the R5 antibody in immunochromatographic tests.
2. General information
- The use of wheat flour and gluten in foodstuffs is extremely common because of their heat stability and useful effects on e.g. texture, moisture retention and flavour. Gluten is a mixture of prolamin and glutelin proteins present in wheat, rye and barley. The RIDA®QUICK Gluten quant. is calibrated against an exemplary wheat flour and indicates the result in gluten. Coeliac disease is a permanent intolerance to gluten that results in damage to the small intestine and is reversible when gluten is avoided by diet.
- The Codex Alimentarius Commission has stipulated in the „Codex Standard for Foods for Special Dietary Use for Persons Intolerant to Gluten” (CODEX STAN 118-1979) the limit value for gluten-free food at 20 mg/kg gluten. This threshold has also been adopted by many national legislations.
- The RIDA®SMART APP Allergen, which is available in the Google Play Store, is required to evaluate the quantitative gluten test strip.
