- Reliable detection of allergens is very important to give allergic people a high level of safety when consuming food. This means that food must be tested for allergens that are not declared. The corresponding tests are carried out throughout the entire food process:
- From checking raw materials and incoming goods to preventing contamination during transport, storage and production through to final product control. One allergen analysis option is the LFDs (Lateral Flow Tests) rapid allergy test. These are effective tools to detect quickly and reliably allergen contamination on the production line, in wash water (CIP), on surfaces and in food products.
- A major problem in allergen analysis is the overload effect or hook effect. Here, a large amount of analyte leads to an imbalance between the analyte and the antibody used, thereby preventing the formation of the necessary sandwich complex. As a result, the result obtained is a false negative, even though the product actually contains a high allergen concentration.
Solution for safe allergen management
- To solve this problem and identify false negative test results, bioavid R-Biopharm has developed LFDs tests with an additional band, called Hook Line. Hook Line makes the overload effect visible. A reduced or absent Hook Line indicates a high allergen level in the sample. This allows detection of high analyte concentrations and thus the identification of false negative results. More reliable test results and greater safety for consumers.
- For example, tests that ensure compliance with hygiene requirements when changing the production line by checking whether allergen residues are present on surfaces or in CIP water. If the allergen concentration is high enough that the test gives a false negative result, the hook effect will reveal this. Surfaces and CIP water will have to be cleaned several times to ensure that there are no allergen residues in the produced product.
