1. Intended use

The Mustard allergy rapid test kit (order code BLH703-15) with the integrated hook line from bioavid is an immunochromatographic assay for the sensitive, qualitative detection of mustard residues on surfaces (for example swab testing for hygiene control in food production lines), in cleaning and process water (CIP water) and in food samples. The integrated hook line helps prevent false-negative interpretation of high-positive samples.

2. General information

- People allergic to mustard react to any component of Indian black and brown mustard or yellow/white mustard. Mustard consists of oil, glycosides and more than 20% protein, some of which are allergenic. Even tiny traces of the allergen in food can trigger allergic reactions in sensitive individuals.

- Mustard is used as a seasoning in meat, to prepare pastes, or as an ingredient in many sauces, soups, sausages, salad dressings and gravies. It is therefore often found in foods as a hidden allergen. Food manufacturers must test for cross-contamination. Significant shortcomings can be seen in the labelling and quality assurance of allergens, especially for mustard. Many products claimed to be mustard-free have been contaminated in the field or during processing. Cross-contamination of allergens into seasonings can occur during processing (dust formation, during milling) or packaging. In bread sold in bakeries, mustard contamination is frequently observed.

- The allergen can be present as an ingredient or as a contamination in raw and cooked products. Under Regulation (EU) No 1169/2011, mustard and mustard products must be declared on the food label
