1. Intended use

RIDA®QUICK Gluten quant. (product code RAL7073) is an R5-based gluten allergy rapid test kit for the quantitative analysis of prolamin contamination from wheat (gliadin), rye (secalin) and barley (hordein) on surfaces, in wash water (CIP water) and in foods such as baked goods, sauces, chocolate-containing desserts, spices and rice flour. It ensures rapid and reliable quantitative detection of gluten residues on surfaces, in CIP water samples and in food using a rapid test strip.

- Safe quantitative results within 10 minutes.

- Only R-Biopharm AG is licensed to use the R5 antibody in lateral flow tests.

2. General information

- The use of wheat flour and gluten in food is extremely common because of their heat stability and their useful effects on, for example, texture, moisture retention and flavour. Gluten is a mixture of the proteins prolamin and glutelin found in wheat, rye and barley. RIDA®QUICK Gluten quant. is calibrated against a reference wheat flour and reports results in gluten. Coeliac disease is a permanent gluten intolerance that leads to damage of the small intestine and can recover when gluten is avoided through diet.

- The Codex Alimentarius Commission has laid down in the “Codex Standard for Foods for Special Dietary Use for Persons Intolerant to Gluten” (CODEX STAN 118-1979) a threshold value of 20 mg/kg gluten for gluten-free foods. This threshold has also been adopted by many national legislations.

- The RIDA®SMART APP Allergen, available on the Google Play Store, is the application required to evaluate the quantitative gluten test strips.
