1. Intended use

The egg allergy rapid test kit (code BLH708-15) with the hook line effect included from bioavid is an immunochromatographic assay for the sensitive and qualitative detection of egg residues on surfaces (for example, swab testing to control hygiene in food production lines), during cleaning and water processing (CIP water) and in food samples. The integrated hook line effect helps to prevent false-negative interpretation of highly positive samples.

2. General information

- Egg contamination in food can cause sensitisation in susceptible people. Food as well as the corresponding production lines must be free of residues to prevent these allergic reactions. The effectiveness of cleaning can be verified by using the surface egg allergy rapid test. Furthermore, they are a quick and easy way to detect egg residue levels in solid food samples.

- Regulation (EU) No 1169/2011 requires that eggs be listed on food labels as a cause of food allergy. Equivalent legal regulations apply in the United States, Canada, Australia, China, New Zealand and many other countries.
- Egg white contains about 10% to 11% protein. The allergological relevance lies in four main allergens that account for up to 80% of the protein content of egg white. The main allergens include ovomucoid (11%), ovalbumin (54%), ovotransferrin (12%) and lysozyme (3.5%). By contrast, proteins in egg yolk are only moderately allergenic.
