Histamine is a chemical produced in the body, released by the white blood cells into the bloodstream when the immune system defends against a potential allergen. This release can lead to allergic reactions caused by allergens such as pollen, moulds, cereals, etc., producing symptoms: diarrhoea, shortness of breath, headache or skin irritation.

Aged cheese
Legumes
Citrus fruits
