- RIDASCREEN® EASY Gluten (product code RAE7071) is an R5-based sandwich enzyme immunoassay for the quantitative analysis of prolamin contamination from wheat (gliadin), rye (secalin) and barley (hordein) in foods such as baked goods, sauces, chocolate-containing desserts and spices.

2. General information

- The use of wheat flour and gluten in food is extremely common because of their heat stability and their useful effects on, for example, texture, moisture retention and flavour. Gluten is a mixture of the proteins prolamin and glutelin found in wheat, rye and barley. Coeliac disease is a permanent gluten intolerance that leads to damage of the small intestine and can recover when gluten is avoided through diet.

- The Codex Alimentarius Commission has laid down in "Codex Standard for Foods for Special Dietary Use for Persons Intolerant to Gluten” (CODEX STAN 118-1979) a limit value for gluten-free food of 20 mg/kg gluten. This threshold has also been adopted by many national legislations.
