1. Intended use

RIDASCREEN®FAST Egg Protein (code R6402) is an ELISA test kit for testing egg protein allergy; it is a sandwich enzyme immunoassay for the quantitative analysis of whole egg (-powder) in foods such as salad dressings, sausages, wine, baking mixes for cakes or bread and ice cream.

2. General information

Egg white is recognised as more allergenic than egg yolk. Egg allergy is very common in children; most children outgrow egg allergy as they get older. The allergen can be present as an ingredient or as contamination in raw and cooked products. Under Regulation (EU) No 1169/2011, eggs and egg products must be declared on food labels. Similar regulations also exist in the USA, Canada, Australia and New Zealand. Egg white contains 9 – 11% protein. Four main allergenic proteins account for 80% of the protein in egg white. These main allergens are ovomucoid (11%), ovalbumin (54%), ovotransferrin (12%) and lysozyme (3,5%). The allergenicity of the proteins in egg yolk is only moderate.

3. Benefits of using the egg protein allergy ELISA test kit

- Combines the detection of ovomucoid and ovalbumin in one kit (most suppliers offer two different kits).

- Specificity: no cross-reaction was observed in many sample matrices (97) and in particular no cross-reaction with raw or cooked meat from chicken, turkey, pork and beef.

- A collaborative study (18 different laboratories) on egg white in wine gave recoveries of 88 – 100,5 % (red wine) and 70,4 – 86 % (white wine).
