1. Intended use

The crustacean and shellfish allergy rapid test kit (shrimp, crab, etc.) with the integrated hook line from bioavid is an immunochromatographic assay for the sensitive and qualitative detection of crustacean allergen residues on surfaces (for example swab testing to control hygiene in food production lines), in cleaning and process water (CIP water) and in food samples. The integrated hook line helps prevent false-negative interpretation of strongly positive samples.

2. General information

- Shrimp, crab, prawn, molluscs, lobster, langouste and crayfish are described as crustaceans. In particular, the muscle protein tropomyosin can cause allergies. Severe sensitisation is not rare. Allergy to crustaceans occurs more frequently in adults and persists for life.

- Crustaceans can be present as an ingredient or as a contaminant in raw and processed products. Food production lines and the food itself must be free of residues to prevent these allergic reactions. The effectiveness of cleaning can be verified using a lateral flow method to detect crustaceans. According to Regulation (EU) No 1169/2011, crustaceans must be declared on the food label because they can cause allergic reactions. Similar regulations also exist in the USA, Canada, Australia and New Zealand.
