1. What is ATP measurement (hygiene monitoring)?
ATP (ADP, AMP) is a component in the cellular energy metabolism cycle. Any living cell also contains ATP..
Kikkoman uses a special reaction solution. This solution emits light when it reacts with ATP, ADP, AMP.
By measuring the light unit, the level of presence of living cells, including bacteria, viruses, organic residue,...
can be determined.
Thereby the level of biological contamination on the surface, hygiene activity monitoring directly in 10s.

2. Training seminar Raising food safety awareness in industrial kitchens and schools
On 07/01/2023, at Room E3.2, Ho Chi Minh City University of Technology, 12 Nguyen Van Bao, Ward 4, Go Vap District, Ho Chi Minh City Vietnam. Accompanied by Kikkoman and other organizations such as: IBF Institute of Biological and Food Technology, Mekong Institute Thailand, Vinatek Group Joint Stock Company... successfully organized a training session on raising food safety awareness for company canteens and schools.

At the training session, Dr. Bùi Hồng Quân shared with the seminar about common food poisoning agents, including 2 common types: toxins and infection. Regarding infection, typical examples include the bacteria Salmonella spp. (a poisoning incident of more than 600 students in Nha Trang), coliforms, Escherichia coli,...
In Kikkoman's presentation, Mr. Kazuyoshi Fukuzumi shared the method of hygiene monitoring using ATP measuring device. He and PacificLAB's technical team also conducted experiments testing the ATP measurement on guests' hands.

The Kikkoman specialist presented the operating mechanism of Lumitester and of the ATP measurementThe ATP measurement results decreased from ~14000 to ~2000 RLU after 2 hand hygiene steps. Thereby it helps effectively monitor thorough handwashing with HClO disinfectant water.

Mr. Trương Thành Công, a food hygiene safety expert, also gave a presentation on ensuring food hygiene safety in school canteens. In this presentation, he mentioned hot food issues in recent years such as water spinach sprayed with herbicide, acepromazine sedative for pigs, the issue of injecting agar into shrimp to increase weight,...He also clearly shared the regulations on canteen hygiene, equipment, water sources, and food sampling methods for testing.
Through this seminar, PacificLAB and Kikkoman hope that in the coming years, Kikkoman will accompany businesses and organizations even more in carrying out programs aimed at monitoring and ensuring food hygiene safety in general and school canteens in particular.

Special thanks to the speakers:
