- In recent years, the number of people with food allergies has not stopped increasing. Allergen-free food will therefore continue to grow in importance in the future. To ensure consumer safety and protect brands by reducing the number of product recalls, strong allergen management measures are needed together with additional testing for allergen residues.

- Allergen management requires a holistic approach, including preventive and monitoring measures, as well as effective communication of allergen information throughout the entire supply chain. Good Manufacturing Practice (GMP) requires the establishment and implementation of a prevention plan aimed at eliminating serious allergens in the finished product. Moreover, a HACCP (Hazard Analysis and Critical Control Points) plan will analyse potential hazards, identify critical control points and define additional measures. If the additional measures from GMP and HACCP do not fully eliminate the risk of allergen cross-contamination, the product must be labelled accordingly.
